Of the 17 hectares producing the red wine, 70% are planted with grenache, 15% with syrah, 10% with mourvèdre and the complement with a mixture of the rest of the 13 grape varieties allowed by the appellation.At harvest time the grapes are hand-picked at optimal ripeness and then sorted in the vineyards. The bunches are fermented without de-stemming in traditional concrete vats for 2 to 3 weeks. The wine is then matured in an array of large and small oak barrels with very little racking or sulphur. After 2 years the Cuvée Réservée is bottled unfiltered, whilst the barrels selected for the Cuvée Laurence patiently await their time at the back of the cellar for another two years.
