This unique winery, in the foothills of the Andes, is owned by Felipe Uribe, a well-known wine consultant in Chile who takes advantage of the altitude to make ripe but fresh wines from local and international grape varieties. The Cota 500 Cabernet comes from the Maule Valley and grapes are harvested a bit earlier than normal in order to retain fresh acidity which balances the ripe fruit notes. Grapes are fermented in stainless steel with native yeasts, and aged in oak barrels for 10 months, adding a layer of complexity to the flavors. An excellent discovery from Chile and a versatile Cabernet to pair with grilled meats or pizza!
