The Finger Lakes is the perfect climate to grow some of the world's best Cabernet Francs. This cool-climate is lower in alcohol which makes it more food-friendly! As with all red varieties that we grow, we achieve ripeness by reducing the amount of fruit carried on each vine. This enables the remaining fruit to become fully ripe and express the most desirable varietal character in the wine. We also increase sun exposure on the grapes by pulling leaves in order to reduce the 'green' notes that are sometimes found in Cabernet Franc.
